Food Recipes – Chocolate Peppermint Cookies

Here at World Hyundai, we have all types of hidden talent! Here is a great Christmas cookie recipe submitted to us by one of our very own! Chocolate peppermint cookies take about two hours to make and it’s easy to do!

Chocolate Peppermint Cookies

Ingredients

8 oz Semi-sweet Chocolate Chips

1/4 cup of granulated sugar

1/4 cup of water

1 tsp peppermint extract

Mix 1/4 cup of sugar with 1/4 cup of water and bring to a rapid boil. Swirl the water gently to melt the sugar. The water should turn into a golden syrup. Remove from heat. Add in the 1 tsp of peppermint extract. Swirl peppermint extract into sugar water mixture. On a lightly greased baking sheet, pour syrup mixture evenly on the baking pan. Let cool (may take up to an hour). Once the peppermint has cooled, it will become very hard. Break peppermint into small pieces and place broken pieces into a food processor. Grind peppermint into a fine dusty substance and be sure to remove or grind any larger pieces! In a small sauce pan, melt 8 oz of semi-sweet chocolate over a low fire. Once the chocolate has melted and turned creamy, pour in the ground peppermint. Mix well. Once mixed, place about half a spoonful on a wax paper covered baking sheet. Spread chocolate with the back of the spoon. Let cool for about an hour.
